letter of intent may work especially if it includes a check to reinstate. Short of that I don't know of any document that would make a mortgage company postpone the sale. Most of them have seen all the games and would rather finish the foreclosure than postpone on the hope that it will be resolved.
BK filing would do the trick. Also if there is a significant mistake in the foreclosure paperwork that could stall the sale.
