Are these fields generally associated with the whole entire property??

Or one of the individual floorplans that are inside of the property??

I think generally the entire property. If I had a property with a variety of spaces for sale &/or lease I would probably make multiple listings for the different configurations and one for the entire property. Assuming it didn't cost extra per listing.

Also some of these apply to only one type of commercial properties and not others. Retail users tend to be concerned about parking ratios industrial users about Dock-height doors but few people would be interested in both.

large single-tenant retail building occupants would be concerned about both... smile (target, walmart, big lots, HobbyLobby, K-mart, Grocery stores, etc.)
